Aiko was born in Henderson, Colorado on June 27, 1938, to Sakuju and Sada (Honda) Sato. After skipping a grade, she graduated from Adams City High School in 1955.
On November 27, 1958, Aiko married Kenzo Horiuchi at the Tri-State Buddhist Temple in Denver, Colorado. Aiko worked with Ken on the Horiuchi family farm and greenhouses in Brighton, growing vegetable starts for the farm, carnations, and bedding plants.
On December 1st, 1959, Aiko and Ken welcomed their first son Gary to start their family. On May 20th, 1963, they welcomed their second son Kirk to the family. On December 2nd, 1964, they welcomed their third son Rich to the family.
In 2022, Aiko and Ken celebrated their 64th wedding anniversary.
Aiko is survived by her sons Gary (Shirley), Kirk, and Rich (Cathy); grandchildren Andrew, Kimiko, Michiko (Erik), Christopher (Emily), Brian, Aaron, and Jordan; great grandchildren Rayden, Paxson, Lincoln, and Colten; sisters Jo Anne and Helen; and many nieces and nephews.
Aiko is preceded in death by her husband Ken, mother and father, brothers Sam and Bill, and sisters Beth and Amy.
Service will be held on January 14th, 2025 at 11:00am.
