Stacey Elizabeth Burdick Stacey was born in Denver, Colorado on May 26, 1969, to Ronald Burdick and Patricia McGinley. She passed on May 7, 2023.
Grade school years were spent living with her family in Arvada, CO. When Stacey was 13 years old the family moved to Jefferson, CO into a house they built themselves. In high school, Stacey met her best friend, Heidi Henzie. Stacey was not enrolled in any specific activities as a teenager; she liked working on cars with her dad and was mostly known for her wild shenanigans with Heidi. Stacey met Alex Ebel at a young age and had a daughter, Sara Burdick. After delivering her first child, Stacey returned to school and earned her diploma at South Park High School, graduating with her class in 1987. She had a brief engagement to John Matthews before meeting Roger “Mick” Knudson. Roger eventually fathered Stacey’s second child, son Devin Knudson.
Stacey worked a variety of jobs in her life. One of her proudest career accomplishments was working for Harriot Anderson as Park County Deputy Clerk. She also worked at the City of Thornton and worked with Mick repossessing cars. She also spent time as a manager at her Mom’s Quizno’s store. Stacey lived in various places throughout her adult life. Some of these included San Acacio, Lakewood, Arvada, Fairplay, Hartsel, Thornton, Colorado Springs, Longmont, Plateville, and Brighton. She spoke of time living with her family in Buena Vista, CO as being the happiest years of her life.
In her younger years, it brought Stacey joy to pick raspberries with her kids and turn them into preserves. She also found joy in baking, driving fast cars, exploring and listening to music, learning history, telling stories, and making others laugh with her quick and creative wit. She was active as a homeroom mother in her kids’ schools. She had a magnetic personality and made friends easily. She loved her animals and was preceded in death by her hedgehog named Johnny Cash, and by her dog and companion Dozer. She especially cherished spending time laughing with and loving her grandkids who call her, “Bobby.”
Stacey was preceded in death by her mom Patricia Burdick. She is survived by Father Ronald Burdick, sister Lori Burdick, daughter Sara Burdick, son Devin Knudson, granddaughters Aiyana Knudson and Leilani Knudson, and grandson Brandon Trujillo. She is also survived by numerous aunts, uncles, nieces, nephews and cousins who loved her.
